Several laboratory studies have shown that mushrooms may prevent cancer by controlling the production of estrogen. Scientists consider that by checking the activities of certain proteins (aromatase), the compounds present in mushrooms can reduce estrogen production. Increased amount of estrogen can induce formation of peptide growth factors, responsible for breast cancer.
How Mushroom Can Fight Cancer?
Researchers in the Department of Food Science and Technology at the University of Tennessee have suggested that white mushrooms are good source of beta-glucans. The presence of soluble dietary fibers (beta-glucans) in mushroom can check cancer by strengthening the immune system.
Beta-glucans may stimulate the production of white blood cells and increase the synthesis of cytokines. Laboratory studies on animals have also suggested that ingestion of dried white mushrooms may boost the immune system and check cancer.
It is believed that the antioxidant compounds present in mushroom can fight free-radical damage caused to the cells. This can help in repairing cellular damage. Ergothionene, the antioxidant compound identified in brown mushrooms, etc, is considered to give protection from liver, eyes, kidneys, skin and bone marrow cancer. The other antioxidant compound drawing attention is polyphenols, found in white mushrooms.
Besides proteins, antioxidants and dietary fibers, scientists have also found other cancer-fighting substances in mushrooms. These are the rich presence of vitamin D, potassium and selenium.
The City of Hope Comprehensive Cancer Center in California is currently conducting human clinical studies. The result should hopefully offer more insight.
